Savigny-les-Beaune "Dessus Les Gollardes" (White)

Origine

Located on the Savigny heights, at an altitude of 280 metres, on limestone soil close to the bedrock.
Production: 0.65 hectares, about 3,500 bottles a year. Blended in the vineyard, one of our domaine’s old traditions.  Average age of the vines: 60 years.

Vinification

After a light crushing, the grapes are transferred into the pneumatic press to be pressed for about 2hr30. The juice then spends two days in vat, at a temperature of 8°C, to remove the solids (settling). Ageing: 10-12 months in oak barrels, 20% of which are new.  Aged on the lees with natural malo-lactic fermentation.  Bottling: light earth plate filtration.  Bottling is carried out at the domaine in July/August, using our own bottling line.
