Origine
Southeast exposure on slopes, against the terroirs of Beaune. Age of the vines: 47 years. The domaine obtained "Reasoned Agriculture" certification in December 2008. Herbicides and insecticides have not been used since 2003. A biodynamic approach has been in place since 2011. Harvesting: by hand. The grapes are transported fairly quickly to the winery in small crates to avoid crushing the grapes and to limit the risk of oxydation.
Vinification
All the harvested grapes are sorted and de-stemmed before going into vat where they will remain for about a fortnight.
Cold maceration (8°C) is carried out for 6-8 days with pumping over of the juice. The alcoholic fermentation lasts for 8-10 days with the cap punched down to extract the various components from the skins. Separation of the free run and press juices, settling to remove solids, then transferred into barrels. Ageing: 12-14 months in oak barrels, of which 30% are new. Aged on the lees, with a racking in July. Natural malo-lactic fermentation. Bottling: light earth filtration. Bottling is carried out on the domaine in November-January, using our own bottling line.
Notes de dégustation
This is a rich, full-bodied wine with a deep colour. It can be laid down for at least 3 years and for as long as 10-15 years.
