Givry 1er Cru Clos Jus is situated North of Givry. Clos Jus is a 8 Ha parcel surrounded with walls, located on a red clayey chalky soil particularly stony and warm.
Vinification
Grape harvested by hand. Grapes are totally destemmed and put in cement tanks. They are then cooled to start a cold premaceration for a few days. Once the fermentation has begun, cap punching are performed twice a day and pumping – over once a day so as to ease a good aeration of the yeast. Fermentation lasts about 14 days, with temperatures control. The whole “cuvée” Clos Jus is ageing in oak barrels during 18 months. Bottling takes place in the Springtime after a light filtration.
Notes de dégustation
Nice ruby colour with purple-blue tints. Nose of small red fruits such as blackcurrant and raspberry. In the mouth, it is well structured. The fruit predominates, tannins are elegant and silky. Vanilla and liquorice flavours.
