Origine
This 1.5-hectare plot has been planted twice, once in 1947 and once in 1954. It is located on the northern border of Santenay, just below the premier cru Morgeot appellation in the village of Chassagne-Montrachet. The soils are a hard limestone and red clay.
Vinification
Cold pre-fermentation maceration (4 days), alcoholic fermentation (11 days), post-fermentation maceration (6 days). 14 months ageing: 12 months in barrel on its lees without racking, then 2 months in vat. 100% in oak barrels, 25% of which are new.
Notes de dégustation
As the wine ages, the aromas ripen and take on a wild fruit and undergrowth character. The resulting wine is powerful and mineral.
Santenay is a wine constructed to mature slowly: 5-10 years for a normal year, but in a great year the wine can age well for up to 20 years.
Mets d'accompagnements
Santenay pairs well with roasted, grilled or marinated meats. It is the perfect wine for game (feathered or animal).
