Givry "Héritage" (Red)

Origine

Domaine Chofflet is located in Russilly, a hamlet within the commune of Givry.  The vineyards are spread over several parcels within this hamlet. The red-coloured earth is composed of clay and limestone.

Vinification

The harvested grapes are de-stemmed and placed in a concrete tank. They are cooled to facilitate several days of cold pre-maceration. After fermentation starts, crushing and pumping-over operations are alternated in order to retain the finesse and fruit so characteristic of this terroir. The length of time spent in vat is around 14 days. 60% of the wine goes into barrels for around 6 months. After blending and a light filtration, the wine is bottled in the Autumn following the harvest.

Notes de dégustation

This wine, which is typical of the appellation, is robust and fine, and develops aromas of berries (blackcurrants, raspberries and cherries) and some vegetal notes.

Mets d'accompagnements

Excellent with white meats, light marinades or feathered game.
