This wine is made from a blend of 4 parcels, which are all east/southeast facing enabling the grapes to ripen well. The average age of the vines is 30 years. The soil is limestone with a good proportion of clay.
Vinification
Each parcel is worked and vinified separately. The grapes are harvested by hand and placed in small baskets of 20 kg to respect the integrity of the grapes as far as possible. 100% de-stemming. The grapes are transferred into concrete tanks. The temperature is lowered to 12°C to carry out a 4-5 day pre-fermentation maceration to extract colour, and the cap is punched down once a day. Fermentation is started naturally by raising the temperature to 20°C. The wine is tasted every day to determine whether it is best to carry out a punching down or a pumping over operation. We mainly use the pumping over technique to extract soft tannins. Vinification, at controlled temperature, lasts about 3 weeks. The wine undergoes 12 months’ ageing in barrels, of which 20% are new. The wines are then stored for 6 months in stainless steel vats before bottling in the spring.
Notes de dégustation
Dense colour with purple tints. Deep on the nose, releasing aromas of dark fruit, with scents of violets and raspberries. Fine tannins underpin the wine on the palate, which is complex and fruity with good length.
Mets d'accompagnements
Pairs well with roasted meats or meats in a sauce, as well as cheese.
If the wine is young, it is best to decant it just before serving.
