The vineyard plot is located on the eastern slopes of Rully, facing the rising sun, below the village's imposing château. The soil here is a fairly deep clay, but still well drained, producing healthy, well-constituted grapes.
Vinification
The grapes arrive in the vat room and are partially or totally destemmed. Once in the vat, the cold maceration (7-8°C) lasts 5 to 8 days, during which the Pinot Noir endows the Rully with its colour and aromas. Alcoholic fermentation lasts 15-20 days at a controlled temperature of 28-30°C. The running off and pressing are carried out as soon as alcoholic fermentation is complete. The resulting wines undergo 12 months ageing in barrels, of which 20-25% are new. The wines are then stored for 6 months in stainless steel vats before bottling in the spring.
Notes de dégustation
Rully 1er Cru Les Champs Cloux is generally a very colorful wine. Powerful and full-bodied, it develops an elegant finesse as it ages. There are intense aromas of red fruits (black cherries).
