The "Les Cadoles" Bourgogne white comes from selected plots in several different domaines.
On the slopes of Tournus and Mancey and elsewhere, you will spy numerous "cadoles", small constructions that served as shelters for the wine growers. Varying in sophistication, their design is quite unique. You could say they look like stone igloos!
These “cadoles” are the subject of an ambitious restoration and preservation programme set up up by the "Société des Amis des Sciences et des Arts de Tournus" (Friends of the Sciences and Arts of Tournus).
Vinification
This wine comes from vines of over 20 years of age. They are carefully transported to the winery to undergo a quick and very gentle pressing ensuring that the juices run clear. The wines from the end of the pressing are eliminated, to make sure the wine retains as much finesse as possible. They undergo 6-8 months’ partial ageing in large 400 litre oak vats, some of which are new and some used for up to 3 vintages. The purpose of this short ageing in oak vats is to provide extra support, to prepare the wine for life in the bottle, but is not intended to impart any oaky flavours.
Notes de dégustation
Golden hue. Subtle and finely oaked aromas of vanilla, roasted hazelnuts and dried fruit on the nose. The wine is full, elegant, lively and fine on the palate. The long-lasting flavours give it a length on the palate which only richly constituted wines can possess. Subtle on the finish, it is smooth, elegant and fresh.
Mets d'accompagnements
The wine’s character and the delicacy of its aromas complement charcuterie and fish dishes. It will also pair very well with frogs legs, lobster à l'armoricaine, as well as fresh goat's cheese.
