Origine
The grapes are produced under HVE 3 certification, the highest level of High Environmental Value certification.
The Gamay grape has a very unique expression, a distinctive blend of fruit and spice, when it is grown in the deep clay soils of the northern Mâconnais, closer in character to those of the Côte Chalonnaise than the Roche de Solutré.
The vines are at least 50 years old and grow entirely on southeast/east-facing slopes.
Vinification
This wine is only vinified in Ganimede vats to extract as much fruit as possible. These vats ensure a very gentle and delicate vinification over a period of 7-10 days.
The wine then spends 8 months ageing on its lees.
Notes de dégustation
The wine is very bright and ruby red in colour, with pronounced violet tints.
The nose is surprising, a mixture of spice (pepper in particular), liquorice and black fruit (black cherries, blackcurrants and blueberries).
The palate is a combination of fruitiness and smoothness and shows a generous power.
Mets d'accompagnements
This is a convivial wine to serve with home-cooked dishes, charcuterie, andouillette, quiche or other savoury tarts.
It is also great with world cuisine, Italian of course, with its pizzas and pasta dishes, but Chinese too, chicken, pork, shrimps, ravioli or even dim sum.
