Origine
The grapes are produced under HVE 3 certification, the highest level of High Environmental Value certification. They originate from low-yielding vines that are over 50 years old. The clay and limestone soils of these south-west facing slopes are perfect for the Chardonnay grape.
Vinification
The grapes undergo a very gentle pneumatic pressing to protect the quality of the fruit.
Vinification takes place in temperature-controlled stainless-steel vats at a temperature of around 17°C to preserve all the Chardonnay aromas.
Ageing is carried out on the fine lees to preserve the full potential of the wine until the time of bottling.
Notes de dégustation
The wine is bright with an intense yellow hue flecked with gold.
The nose reveals a lovely freshness; acacia, pear and citrusy lemon tart aromas.
On the palate, this wine offers plenty of drinking pleasure with a smooth, rich structure and good body.
Mets d'accompagnements
This is a very versatile wine. It can be served as an aperitif with salmon verrines, courgette fritters or cubes of goat's cheese. It will also pair nicely with ceviche, steamed fish or poultry in a cream sauce, savoury tarts, cheese puffs, mixed salads, spring rolls or wok dishes.
