Origine
Domaine Chapuis has around 12 hectares of vineyards in the Mancey area. It possesses around 3 hectares of vineyards in this appellation in a location known as "Les Cras", which was planted between 1981 and 1987. The soil is clay-limestone with an eastern exposure. The soils are all worked: earthing-up and de-earthing, and 2 hoeing operations, are carried out to avoid the use of herbicides. The treatments against diseases are sustainable and only performed when necessary. Insecticides have not been used for 8 years, nature having found its own natural defenses. The pruning system used is the Royat Cordon, a short pruning method designed to curb excessive production and enhance the quality of the wines.
Vinification
Harvesting is carried out by hand. The harvested grapes are transferred into vats after destemming. The maceration lasts 10-12 days and is carried out under close surveillance (transformation of the grape sugar into alcohol, temperature, etc). The colour is extracted after a few days' maceration at 28-30°C. The wine obtained from pressing the solid matter is blended. It is then run off and transferred into barrels. After one year's ageing in barrels and vats, and some racking, the wine is bottled.
Notes de dégustation
Colour: intense bright red. Nose: red fruit aromas, black cherries in particular. Palate: supple and fruity, with fine tannins suggesting that the wine could bear 5-6 years cellar ageing in the right conditions.
Mets d'accompagnements
This wine goes perfectly with white meat, poultry and fine cheeses.
