Domaine Annie Derain has 0.25 hectares of Givry 1er Cru in a location known as "En Choué" in the Givry hamlet of Russily. Particularly early ripening, the 45-year-old parcel produces small grapes which are always gorged with sugar.
Vinification
The grapes are harvested by hand and transported to the winery in crates. The grapes are fully de-stemmed and then go into vat, where the temperature is lowered to assist cold pre-fermentation maceration. The wine spends 10-12 days in vat. After a few days of settling, it is transferred into barrels, of which 25% are new. The wines are aged for 10-12 months in a cool cellar, during which time the barrels are regularly topped up. The wines are bottled after several months’ blending together in vat.
Notes de dégustation
Deep, ruby red hue. Ripe fruit, spices and light tobacco on the nose. On the palate, the wine shows a silky tannic structure and pronounced ripe fruit flavours, followed by hints of vanilla and sweet spice.
Mets d'accompagnements
The Givry 1er Cru pairs well with a rib of beef with a mushroom sauce, a haunch of venison, roasted young wild boar and any type of meat with structure.
