Origine
The grapes are grown under HVE 3 certification, the highest level of High Environmental Value certification. They come from the coolest plots of west-facing vines in Royer and Mancey. The earth here is red, with fairly deep clay-limestone soil.
Vinification
Extra attention is paid to the grape pressing operation, which is quick and direct, i.e. without maceration. The fermentation temperature is also carefully monitored: low enough to draw out the wine’s full aromatic potential, yet high enough to achieve a delicate extraction.
Notes de dégustation
You can almost hear the chirping of cicadas! This wine is instantly seductive with its attractive, slightly salmon-pink almost coral hue.
The nose is vibrant with lovely tangy aromas of grapefruit, lemon, apricot and a certain minerality. The palate is nice and taut. The oily veil between the tongue and the palate lends the wine a very pleasant richness. The silky texture is set off by a slight acidity creating an excellent balance.

The duality of richness and tension allows for a large variety of food pairings including exotic cuisine, Asian or Indian in particular, veal or crab tartare, paella, charcuterie, pork chops, pizzas, summer salads, savoury tarts, barbecues, etc.
