Located in the south of the Côte de Beaune, Chassagne-Montrachet is one of the five villages to which the Côte de Beaune owes its worldwide prestige.
Soils: limestone-clay, slopes and semi-slopes.
"Culture Raisonnée" (sustainable growing) with ploughing, leaf thinning and green harvesting.
Vinification
Grapes picked by hand and meticulously sorted. Settling, gentle pressing, temperature control.
Ageing in barrels for 18 months with 20 and 30% going into new barrels. Harvesting by hand. Settling. Low temperature fermentation at 18°C.
Notes de dégustation
This is a powerful, fat wine. Almond-type aromas (green or roasted, depending on the wine's age), ripe apples, white flowers and honey. Remarkably long lasting aromas and flavours.
Mets d'accompagnements
White wines should never be served chilled, but preferably at 11-13°C and are best enjoyed with fish.
Suggestions: Grilled sea bass, pan-fried sea scallops.
