Origine
This wine comes from a parcel of vineyards, planted in 1959 and facing east/southeast. The fairly poor soil has a high limestone content with a fine layer of clay, and results from the erosion of a small hill sitting above the parcel.
Vinification
Manual harvesting is done at optimal maturity. The grapes are pressed in a pneumatic press. The juice is placed in vat for 12 hours to clarify naturally. After a first racking, the temperature is raised to 17°C in order to start fermentation (without yeast). A part of the wine is fermented in oak barrels, the remainder in stainless steel. The fermentation temperature is stabilized at 18°C. The wines are racked, blended in August, and bottled before the harvest of the following year.
Notes de dégustation
Due to the nature of the soil on this parcel, the wine has a very distinct personality and a strong mineral character. Bright, green-gold hue. The wine releases aromas of fresh fruit (apples, pears), citrus and white flowers on the nose. Its barrel ageing adds a discrete touch of vanilla. Very honest, full and rich on the palate, showing plenty of sap and vigour, it can undoubtedly boast the longest ageing potential (5-10 years) of all the white Rullys. It is also the most stylish.
Mets d'accompagnements
Pairs well with very fine charcuterie, marinated fish or fish cooked in butter or cream.
