Situated at the top of the southeast facing slope of the Roche de Vergisson. The parcel covers one hectare in a location known on the official land register as "Sur La Roche". The shallow soil is made up of Jurassic limestone. The vines, aged between 40 and 50 years, grow in a very mineral sector.
Vinification
The grapes are picked by hand and pressed immediately. After settling, the must is fermented directly in barrels (French oak barrels, aged 1-7 years). The wine will stay on its lees until the following August. After regular stirring of the lees and topping up, and after malo-lactic fermentation is completed, the wine is racked, blended, lightly filtered and bottled at the Domaine.
Notes de dégustation
This wine, with a beautiful golden yellow hue, shows true aromatic qualities. On the nose, the wine releases mineral notes against a lemony backdrop. Soft, fleshy and full of freshness, this is a powerful wine, long on the palate. The limestone gives it a mineral dimension and a complex structure.
Mets d'accompagnements
Pairs perfectly with steamed sea and river fish served with a butter-based sauce, or with a lemon-roasted chicken. Normandy-style fillets of sole, sea scallops in a creamy sauce. It can also be enjoyed on its own, as an aperitif.
